If not would I have any luck using file recovery software like photorec? Thanks in advance
ReclaiMe might work (you'd need to connect the disks up to a Windows PC). https://www.reclaime.com/
You could also use paid Netgear support (my.netgear.com). That might require a data recovery contract. https://kb.netgear.com/69/ReadyNAS-Data-Recovery-Diagnostics-Scope-of-Service

That's a bit expensive for my budget so I'll have to create a new volume and try to recover what I can from backups. I'm a bit disappointed though that replacing a disk in a raid-5 lost everything - doesn't fill me with confidence.

You could try deleting one of the volumes, and see if it comes back. But I'm not sure which one. JohnCM_S or Marc_V might be able to tell - try downloading the logs and send them a downloadable link via PM (private message). You'd do that using the envelope icon in the upper right of the forum page.

RAID re-sync is very drive intensive, so a scond drive failure duting one has a higher liklihood than during typical use, and that second failure will render the volume unusable. Before doing a drive replacement, it's always best to update your backup and check the health of the remaining drives.
