No. You need to destroy the existing volume, which will delete all the data.
The best mode is to use JBOD (with 2 volumes). If you create one 6 TB volume with RAID-0, then you will lose all your data when either disk fails. That's a showstopper for me. If you have 2 3TB volumes, then you only lose the data on the failed drive. You do need to roughly balance the storage across the two volumes, but in my opinion that is a small price to pay for the extra safety.
Either way, I do suggest getting using a UPS with your NAS. Many data loss stories begin with an unexpected power cut.
FWIW, you might find it difficult to reconstruct your movie collection if (really when) you lose the volume. Perhaps get a larger USB drive (or a second one), so you can keep your backup up to date.
