You are using old instructions for OS 4.x ReadyNAS.
With OS-6 systems like the RN214, you can switch to flexraid after you complete setup (no timer sillyness). You then delete the data volume (no need to wait for it to finish syncing) and create the one(s) you want.
I recommend jbod (one volume per disk) over a single volume that spans three disks. It is much more robust - with a single volume, the failure of any disk results in complete loss of all the data. With three independent volumes, you'd only lose data on the disk that fails.

Thank you so much! Thats sorted it now! Just a quick question about jbod, will all three disks been seen as completely independant from each other? or will they independant but viewed say from a media server as one complete 9Tb hard drive?

You'd have 3 independent 3 TB volumes, and you'd have to arrange your shares so everthing fits.
Clients will see all the shares, no matter what volume they are on. ReadyDLNA and Plex also don't care what volumes the shares are on (and multiple shares can be included in one plex library).
If you need single volume, it is much better to pay for the extra disk (or bigger disks) and go with XRAID
