You can downgrade back to 6.10.9.

Whether you downgrade or not, you'll also need to make the changes here:
Posts 1 and 37 are particularly relevant.
Once those changes are made, you will be able to install plex from ssh. And if you downgrade, you would also be able to install it from the web ui.
One caveat - Plex likely won't be providing the app for ReadyNAS indefinitely. You should keep a copy of the deb file. Even then you will likely have to install Plex on a different platform at some point in the future. Personally I run the Plex server on a PC, but keep the media files on my ReadyNAS.

FYI anyone still paying attention here, or wandering this way years in the future.
You can still install apps to 6.10.10 without any SSH and other complexities.
Just tell the NAS you're giving it a new firmware, but provide the apps install package instead. The OS will happily take that package and install it.
System->Settings->[Install Firmware]
Successfully used to install the most recent version of Plex on the device. Rebooted, tested, the NAS still works as expected and Plex is running the most recent (1.40.2) version.
I have no idea WHY this works, because it sure as hell shouldn't, but it does.
Note: I had to uninstall the old version of plex first. Installing over that one worked but the app was buggered.
This is on the ReadyNAS 104, runing 6.10.10 BTW.

This may only work correctly when installing an update. It certainly won't work with anything that requires updates to or entirely new dependencies if the steps required to change the repository location aren't done.
