Stephen, thank you for pointing me to the logs!
The Log was flooded with:
Failed to set locale. Fix your system.;
And this was the reason for my snapshot problem. All snapshots were still on the volume, but there was a display problem in FrontView caused by the missing locale..
I fixed the locale with:
locale-gen "en_US.UTF-8" dpkg-reconfigure locales
After that everything was fine again.
