Backup ALL local shares to USB drive

I am having issues with USB.
I have 1.24 Tb on the NAS with no snapshots. I have set up an RSYNC transfer to a 1.5Tb drive (1.37 available) of each share. Initially I formatted to EXT3 and manually transferred the data over, before setting up the backup jobs. Os is the latest Beta 7 for the RN102.
The backups seem to take forever and the space on the USB (2.0) drive is vanishing fast and I am about to run out. My thought was that it may be due to my editing the source, removing some data and moving other data around, but I thought that RSYNC was clever enough to deal with that? I have looked for an option called delete files on target, but haven't found it anywhere.
