First - thanks for the info; very helpful.
The permission denied error in terminal confirms this is not a Finder issue, so it must be an issue with permissions on the NAS which we can fix.
Unfortunately, while the admin user gives you full visibility of the data on the NAS over AFP, it does not give you full write access to be able to delete and rename files/folders owned by other user accounts - you must specifically setup the NAS to allow that. So I would guess that the folder you are unable to rename was created by another user account. As you are the only physical user, this probably means you connected to the NAS as the default Guest user at some point without realising it and created the problem folder.
To fix this
You should now be able to rename/delete any files or folders
Note that the above will also give full read/write access to the Guest user if you still have guest access enabled. This can be avoided, but you would need to setup a user account rather than connect as admin.

To fix this
- Open Frontview -> Shares Listing
- Click on the AFP Icon for the share you are having a problem with
- Select the tab called Advanced Options (Upper right of the window that appears)
- Set the "Share folder everyone rights" to Read/Write
- Check the box called "Set ownership and permission for existing files and folders..."
- Click Apply
- Disconnect and reconnect to the share to ensure you mac recognises the changes
You should now be able to rename/delete any files or folders
