That partition log looks fine. You have 4k sector alignment which means you last did a factory default on 4.1.7 or later. Disk 3 /dev/hdg is your parity disk that's why it doesn't have a partition table on it.
No. You either have to replace the removed disk (considered to be "dead" by the ReadyNAS) with a 2TB disk, or backup and do a factory default (wipes all data, settings, everything).
