Using the debian archives y ou won't get any newer version of PHP than 5.2.0. Building your own updated copy is certainly possible but you need to install a lot of prereauisites to actually make it work. The danger of completely killing your NAS is minimal, the worst case scenario being that you'd have to do a firmware re-install which will only fix the OS but leaves the data intact.
