Very sorry I didn't explain properly.
When the disk looked like it was failing, I removed both 3TB drives and then inserted 2 brand new 2TB drives.
All of the data is now on both removed drives (removed over a year ago) and now when I plug either in to the HDD viewer, the drive appears in Disk Manager and both show as healthy but I cannot access the data.
I hope this makes sense.

So you messed up a bit because you can't access your data.
You still can access your data on previous HDD but you do have to get linux.
Then when you have access to that data, you factory reset your device and reinstall the configuration. and then transfer the old data to the new one!

Proper procedure to rebuld a crippled array is to remove only the crippled HDD and Wait until the complete rebuild of the array!!!
A freind of mine lost 4Tb of datas doing so.
Turn off the device and wait untill your are doing a mistake.
