Where are you seeing a transcoding spec for the RN314? The RN21x series does claim support for 1080p transcoding, but the RN3xx does not mention it on the datasheet or product literature I have seen.
AFAIK there is no linux iTunes server that supports home sharing. You can thank Apple for that (the linux software is reverse-engineeered freeware, because Apple doesn't provide iTunes for that platform, and hasn't provided specs on home sharing either).
Airplay does work, but I agree it isn't what you want. If you have iTunes running on a PC (OSX or Windows), then it can access the library on the RN314. I agree that doesn't quite get you there either, since you do need a PC running in order to see the content on the AppleTV.

To be honest, I had read so many spec tables, reviews, etc. that I misquoted the 214 for the 314. However, I think the transcoding was based on Plex use which is also supported on the 314. It is my understanding that the 314 is more marketed for SMB than home. In any case, it would appear that my fears are realized.
I have already been down the path of using an over-powered Linux server to provide similar services but still lack iTunes video streaming to AppleTVs.
I still feel that though Netgear has very good products, the specification/write ups on the ReadyNAS devices are very ambiguous and paint an inaccurate picture of product capabilities.

The RN314 can transcode, but Netgear doesn't specify that in the datasheet. I think the RN214 quadcore is more capable than the RN314 in that respect (though the RN314 single core performance is better then the RN214 single core performance). However, Netgear doesn't provide any benchmarks to show this, and I haven't seen any third-party results either.

The RN314 can transcode some 720p video.
I would recommend the Apple TV 4 as that has a Plex app.
There is a PlexConnect workaround to use Plex with an older Apple TV, but I haven't looked into that in depth as the ATV4 is my first Apple TV.
