You should have no problem with a ReadyNAS Pro or 3200 in this scenario. Of course, much depends on how busy your Domino apps are but the performance is in excess of 100MBps for both platforms.
Check the success story for Data Coordination - they are running a similar environment over NFS with a 2100. iSCSI is the same performance or possible a little slower (more protocols involved).
The 3200 will support an additional 2-port Intel NIC, so you can segment your traffic for performance improvements. This feature is in beta at the moment.
