Seeing you are running the beta your issue is different.
You can try things like
to check the load on the system
And other commands to check the status of key services:
It could be that Plex is putting such a high load on the system or there could be something else going on.

# top
to check the load on the system
And other commands to check the status of key services:
# journalctl -a | grep apache2 | tail -n 20
# journalctl -a | grep readynasd | tail -n 20
# systemctl status readynasd
# systemctl status apache2
# btrfs fi show
# df -h
# df -i
