I woul start with logs analysis by going to front end System >> Logs >> download logs and the check log files with snapshot action details.

Thanks, I checked out the logs and there were not recent errors and no entries with snapshots in then :(

Yes, I now have a mixture of smart and custom snapshot and none of them appear to be working :(

If you have ssh enabled and you feel comfortable in linux command line - you can check the snapshost set up on a system level.
Once connected - navigate to
/YourVolumeName/._share/YourShareName/
and check two files
custom_snapshot_management.conf custom_snapshot_schedule.conf
In the first file you will find basic set up, including 'enabled' flag. See sample from my box below:
enabled = yes retention_rule = lifetime lifetime = 5184000 number = 30 nonempty_snapshots = yes prev_versions = no
In schedule conf you will see something that will match the hour/week map from the front end
..........1.....1.....1. ..........1.....1.....1. ..........1.....1.....1. ..........1.....1.....1. ..........1.....1.....1. ..........1.....1.....1. ..........1.....1.....1.
Can you please confirm it is enabled and you have something more than only dots in the schedule file?
Additionally - you can check if your cron daemon is running
