It's confusing because there is no hardware limitation. The numbers you see were just the largest shipping disks at the time the data sheets were published. So you can go with 2x16TB if you like. If you are using XRAID/RAID-1, it will take a while to resync (4x longer than it took for your current configuration). If you are using JBOD or RAID-0, you will need to back up the data, destory the current volumes, create new one, and restore the data from the backup.
