Ok ya, v4 doesn't have separate IoT network support.
Do you have any RBS? if so, are they RBS750 or 350s?

One more wrinkle. When I was researching this I was told you need to be on 2.4 dedicated ghz. This is forum boards I have read. So I went out and purchased a TP Link WiFi Access Point TL-WA801N, 2.4Ghz 300Mbps
I plugged that into one of the RBR ethernet ports and so I have a dedicated access point at 2.4ghz. And unfortunately just like Orbi, connects and then 1 hour later disconnects.
And finally had plumber put in a brand new replacement of the Moen Smart valve to make sure it wasn't a lemon and same issue of disconnecting.

Ok, that's good. You can update the system, RBS first to v7. I highly recommend v.21 as it's the most stable version of FW:
After RBS are updated, update the RBR lastly. Then disable the auto update feature on the RBR. Can follow this process to update the system in the PDF: https://community.netgear.com/t5/Orbi-WIFI-6-AX-AND-Wi-Fi-6E-AXE/Procedure-for-Factory-reset-of-RBS850/m-p/2359585/highlight/true#M53030
Once updated you can use the separate IoT network to get your device connected:

Having conclusively proved that "2.4G WiFi" is not the issue (and thus there is no need to create an IoT WiFi network), it might be helpful to review what indicates that the Moen valve has disconnected?
- Does it disappear from the Orbi Attached Devices display?
- Does the Moen smartphone app report a problem?

Ok thanks for the idea. The MOEN clearly on the app and email indicates always about 1 hour later after connecting that it's disconnected.
It is in the control room literally 2 feet from the RBR so proximity is not an issue.
What I am going to do at the other suggestion is next time at home, I am going to work to update the firmware and see if that solves it. Thanks for the thoughts here.

Something to check as well next time your at the home location, when the device shows it's disconnect, check the RBRs web page for connected device. See if it's shown as connected there. I've seen something where the device remains connected on the RBR web page, however the app seems to differ.

Something you can try, On the TPLink, set up the TPLink for same SSID name and PW as what is on the Orbi router. Then connect the device to this AP. After it connects to the TP-Link, Power it OFF. The device should auto migrate to the Orbi SSID name.
Also what is the size of the home in Sq Feet?
Does the device disconnect if you turn OFF one or both RBS?If still fails to keep connected, may need to try the FW update.
