Setting file permissions ... NV+ v2 / Win 7

Firstly, Im not sure if I understand all this right, but I have to set permissions using Windows Explorer (right click - properties - security etc)?

With in the browser access to my ReadyNas, I have set a share's (MEDIA) permissions as such:
SHARE ACCESS:
Everyone (read only)
ME (read/write)
Loungeroom (read/write)
- WDTV Live
Kidsroom (read/write) - WDTV Live
PROTOCOL-SPECIFIC SETTINGS:
Folder Creation Group Rights: read/write
Folder Creation EveryOne Rights: read only
File Creation Group Rights: read/write
File Creation EveryOne Rights: read only
FILES AND FOLDERS:
Owner: ME
Group: GENERAL
Folder Owner Rights: read/write
Folder Group Rights: read only
Folder EveryOne Rights: read only


I am pretty sure I did not touch any other settings.

I cannot change anything using this browser program for further sub directories, is that right? e.g. MEDIA\TV Shows (everything is greyed out for TV Shows).

So, my real question, how do I set a subfolder so that certain user groups can access it, but others cannot. For example I have the following directories:
Media\TV Shows\General
Media\TV Shows\Over18
I want all users (I made a user group in the browser called GENERAL and ticked all the boxes so all users are associated with it) to be able to access the GENERAL directory, but I only want a few users to be able to access the OVER18 directory (I made a user group called ADULTTV and only associated ME and LOUNGEROOM with it).

I also want TV Shows directory to be read/write for the WDTV devices so they can create their .wd_tv folders, but I do not want the GENERAL or OVER18 folders to have read/write (except for admin and ME), as I dont want .wd_tv folders everywhere.

I also have a Synology NAS, so I was spoilt in the past as the browser program has an inbuilt directory function where I can do the above with a few clicks.

I can, using Windows Explorer, right click on a folder, say GENERAL and do the following:
- right click and choose Properties
- click on Security tab
- click on Advanced button
- click Change Permissions button
- click Add button
- here Object Type is set to: User, Group, or Built-in security principal
- here From this Location is set to: 192.168.1.66 (which is my NAS ip)
- click on Advanced so I can add in a group
- click on Find Now
- enter Admin for user and the password to login
but nothing happens, as the list is the same even before I logged in at the last step above, the list reads:
ANONYMOUS LOGON
Authenticated Users
BATCH
CONSOLE LOGON
CREATOR GROUP
CREATOR OWNER
DIALUP
Everyone
INTERACTIVE
IUSR
LOCAL SERVICE
NETWORK
NETWORK SERVICE

TERMINAL SERVER USER
This Organization Certificate

However, there is no listed users or groups that I have created.

The permissions that already exist, in case this is usefull are:
admin (NAS_name\admin) - full control {this folder only}
admin (Unix Group\admin) - full control {this folder only}
CREATOR OWNER - full control {subfolders and files only}
CREATOR GROUP - full control {subfolders and files only}
Everyone - traverse/read/execute {this folder, subfolders and files}

Can I do what I want (as stated above), and if so how? The only tutorial I could find was for Windows XP and too many things were different for me to be able to follow it coherently.
