DHCP across Stacked Switches

I have 1x GSM4352 and 2x GSM4328 stacked switches via fiber and a M4250 10GX2 with a copper link. These switches are the backbone for a standalone AVoverIP network. The system is function well for the AV over IP but I need to add APs across the buidling to enable wireless control of the system. Since there is no internet connection or router it is my understanding that I will need to set one of the switches as the DHCP server in order for the APs and wireless clients to function. I have found this article on how to setup a VLAN and DHCP server but my question is on what switch do I do this? or all switches? And will this have any negative effect on my already well functioning AV over IP setup?
