I have a stack including (2) XSM4324CS and (1) GSM4328S. If I enable port mirroring on one of the 10GbE switches will it choke?

Of course you an enable port mirroring on a M4300 switch - it's feasible of course. Depends on what you expect, what scope for this mirroring should be. Needless to say you can't mirror a 10G port to a 1G port.
