This simple tough configurable switch is basically plug and play of course. Plug-and-play does not magically read the user's ideas or replace some basic networking know-how I'm afraid.

This is nothing these simple configurable switches do. Even smart managed don't help here. Such a switch is not required for what you want to achieve:

To have a server configured for a fixed IP address, you either configure the server adapter to a static IP config, or you let the DHCP server on your network (typically operated on the router) to always assign the same IP address by creating a MAC<->IP reservation.

The same non-magic is required if you want to assign a fixed IP address to this switch for the management, to a computer, other server, IoT or any other device on your network, ,,,

Stick with a single network, one VLAN (default, already in place) only, don't think about multiple networks, routing et all - ways beyond of what you need for your network most likely (and no need for a managed switch at all).

Keep in mind that if you get a new router, the router LAN IP is the same, ensure the local network IP subnet is the same as on your previous router,  and the DHCP server MAC<-> IP reservations are the same again - otherwise the average Joe won't be able to find and access the devices on static (fixed) addresses anymore. Yes, this is the very basic network management one has to do.
