When using the switch connecting to my router and computer via ethernet and other items (HomePods, iPhones, etc.), do they recognize each. other as on the "same network"?
As you are referring the unmanaged MS108UP switch, and assuming you talk of a typical consumer router with just one LAN (so one local network, no VLANs, ...), very likely yes.

Also, if different devices use the different Netgear networks (Netgear-5G-2, Netgear-5G-1 or Netgear19) are they recognized by each other?
The Wireless names (SSIDs) make the reader believe these wireless networks are served by Netgear devices. Assuming again you are talking of a network with a -single- consumer NAT router and probably some wireless extender, a possible answer might be a yes here, too.
SSIDs like Netgear-5G-2 and Netgear-5G-1 indicate somehow, there is a device with two 5 GHz radios

It should be a simple question regarding setting up a LAN and how it relates to my wifi network.
Tell us more about your network, your Netgear devices (routers, access points, extenders) please.
Any specific issues you want to address? Probably easier to ask the community then consumer support.
