I'm looking for a good video that explains how to make the change. I have been searching online but not finding exactly what I need.

This brings up the question as to why use a static IP, which according to the manual is not the preferred method for setting up an AP. Just trying to understand things before I move forward.

So you'll know how to access the MRs web page as the "Static" IP configuration won't change. Dynamic, there is the possibility that the IP address can change from the host router.
I use the Static configuration all the time when I use AP mode. I know where the WEB UI is when needed.
"Not preferred" as the static configuration is a more advanced configuration, while the Dyamic is easier for the less advanced user. Otherwise, Static is good to use if you userstand the configuration and how to use it. Why I drew up that FAQ for it, to help others.
Up to you how you configure the system though. Good Luck.
