I've had this issue too. I experimented a bit and enabled the IOT SSID on JUST the 2.4GHZ radio and ZERO issues. Additionally, when connected to a satellite either via WIFI 5GHZ on the primary SSID or wired, also ZERO issues. So, no issues with the 5ghz backhaul or the 2.4ghz device radios. Only the 5Ghz device radio on the RBR drops connections.
I actually thought this was a problem with the RBR 5Ghz radio, so I bought a refurbished RBR850 - SAME ISSUE.
For clarification on your remediation above, are you saying downgrade the firmware on the RBS then the RBR, and THEN factory reset config? Did you rebuild the config from scratch or did you load a CHK file from backup?
Did you downgrade to 7.2.6.21 or did you go back to a 4.* firmware?

This actually didn't work for me 😞
I repeated the same procedure twice with two different RBR850s. The 5GHz device radio keeps dropping connections. I also verified it's not WPA3, and WPA2 also has the issue. So it's not the secrets handling. I'm speculating, but that firmware seems to have permanently changed a radio setting, maybe collision handling? IDK. The backhaul 5ghz and device 2.4ghz work with zero packet loss.
Has FW been downgraded on the RBS first then RBR lastly, factory reset and setup from scratch is required after wards, disable auto update on the RBR.
What is the Mfr and model# of the Internet Service Providers modem/ONT the NG router is connected too?
Be sure your using a good quality LAN cable between the modem and router. CAT6A STP is recommended.How many RBS are deployed?
What is the size of your home? Sq Ft?
What is the distance between the router 📡 and satellite(s)🛰️? 30 feet or more is recommended in between RBR 📡 and RBS 🛰️ to begin with depending upon building materials when wired or wirelessly connected.
