What brand and model# is this PC your using? MacBook Pro M4, MacBook Pro 2020, Mac Studio M1
What brand and model# is the ethernet and wifi adapter in this test PC your using? Direct Ethernet to Studio, Using an Anker USB C to Ethernet adapter when trying to connect directly.
What speeds do you pay for UP and Down from the ISP that you should be getting? 80 / 10
Are you seeing to spec speeds with a ethernet PC connected directly to the ISP modem there with out the RBR being online? Yes
What happens if you use the wireless backhaul to connect Satellite 2 to the RBR? Do you mean when RBS is connecting wirelessly only? As stated above, my speeds drop dramatically if I am connecting or try to connect to the RBS, even if I can get a throughput connection. The fact that my original set up in my house had the wireless RBS and my laptop not being able to pass through to the internet when connected to the RBS is what caused this whole investigation in the first place.
One possibility is that the ethernet backhaul is negotiating 2.5 gbps, but the cable actually can't carry that reliably. Even with a new Ethernet cable it should be able to connect at 2.5G but it does not.

USB adapter to Ethernet to RBR : 84 Mbps
I can't test it higher because my rural service max is 90 Mbps.
Note here, I am only using the adapter for testing purposes. My Mac Studio in the office where the speed is weaker is Ethernet port to Ethernet port with no adapter required.

And that is the connection rate seen at the RBR Show stat page or is this the speed test with the adapter? Connection rate differs and is only the connection between the adapter and the port in back of the RBR or RBS. We are looking for connection rate here. When connected at the RBR, the connection rate can be seen on the RBRs web page under Advanced tab/Internet Section/Show Stats.
The adapter may show connection rate as well on the Mac OS networking properties as well on the Advanced Tab I believe.
ANKR makes different adapters, some that only support 1000Mpbs and others that do support 2.5Gb Connection rates.

FYI FURRYe38 jefferis the Anker USB C to Ethernet adapter is probably not enough info, as they have 1GB and 2.5GB adapters. I would ask for Model Number, and also on Macs, go to 'Apple logo top left -> About this Mac -> More Info -> System Settings-> Network - > USB connection -> Details button -> scroll to bottom, 'System Report' -> under Hardware, click on Ethernet and see what 'Maximum Link Speed' says.
Also in that same section, what is the Vendor Name (mine is Realtek) and Product ID (mine is 0x8157)? I ask these because there have been some issues with certain chipsets - probably not in play here, but just in case.

These are the stats for the last 4 days I note I could set an advanced backhaul to 240Mhz but not sure if that would help between the RBS and RBR

Ok so this adapter you have is only 1000Mpbs so you won't see 2.5Gb connection rates at the RBR or RBS.
However you should see your ISP speed at the RBR and RBS at around 80-90mpbs which you said you do at the RBR.
Now connecting at the RBS, if you had the RBS ethernet directly connected behind the RBR near 25-30 feet distance and the adpter connected behind the RBS, you should see same speeds where with the adapter and PC. If the RBS was wireless connected instead of ethernet to the RBR, should see same speeds with the RBS at 30feet distance. If your not, possible this RBS could be faulty.
You only have one RBS currently?
