C7000 can be put into "bridge mode". Note that Bridge mode in DOCSIS gateways mean modem-only mode. It is not a "AP mode".
Many folks use Bridge mode as generic term to mean many different things.
You got carried away with Spectrum sales talk to force you into getting voice which makes you rent their modem and Router.
They will charge 4.99 or 9.99 (not sure of exact price) for Wi-Fi router rental.

I would be tempted to see if the C7000 does the job. If so, cancel the rented box.

spectrum unfortunately does not qualify 3rd party Voice modems (eMTA).
Comcast does. We have CM500V and C7100V for that purpose so that you dont have rent Comcast double-play boxes.
