The speed issue is wireless only. When I use a hardwired ethernet cable on my laptop, I get my full internet speeds.

Honestly, I was a little bit surprised. Again, my apartment has only two bedrooms. I don't think I'm having unrealistic expectations by wanting the wifi signal to cover my whole place...

The answer really depends on layout and construction, e.g. brick / reinforced walls will attenuate signals significantly differently to plasterboard walls. Given your description I would suggest a router such as the R7000, simply because I have one and it covers both floors of my house completely (interior brick walls).
