What can I say, you are the man!
I already knew this before I posted, but I was kinda just hoping the extender was bad, or it was just a setting I was missing. At least having an answer will help anyone else experiencing the same issue, and hopefully get a new firmware in the works for the 3700 that will resolve this (is there any way to submit a known bug?).
Anyway, I went back down to v1.0.0.12 and have been golden. Not a single reboot required since.
