You can use ssh (apt) to install it.
Or you can upload it as if it were a firmware update - using the "Install Firmware" button in the system->settings->update section of the web ui.
Note that future plex update might require you to manually adjust the config files for apt - there is a step-by-step on how to do that here:

Ever since I upgraded from running plex on a small ARM based device to a full PC/GPU, pleg is so much better. Runs faster, transcodes better, and just a more enjoyable experience. I'd keep on eye on your local marketplace as a little older PC with built in quicksync or decent GPU can be had for pretty cheap and really upgrade your experience.

jorgeoro: I decided to put my applications an a dedicated PC back in 2016 (when I got my RN526x). I also recommend that approach. Keeping the applications on a separate machine makes upgrading simpler (and gives me more years of service from the NAS).
My current application server is an always-on desktop PC that has an NVIDIA GPU. The media itself is stored on my NAS. Performance is better than running Plex on my RN526x, and certainly much better than you can get running Plex on an RN102.
Also, all ReadyNAS are end-of-life, and the version of Linux they use is no longer supported by the Debian community. At some point Plex will no longer support any ReadyNAS platform. So eventually you will need to run Plex on something else.
