Again, I don't own a v2, though I do have 4.1.x, 4.2.x, and 6. NAS.
What I suggest is starting with just one disk installed, and then selecting JBOD if it is available or RAID-0 if it is not. Starting with one disk ensures that the NAS can't create a 2-disk volume.
After setup, add the second disk. There will be a way to create a second volume using it.
