I would go with the Pro6 (best power/performance). If you need rack mount, then the 2100. Avoid the Sparc (NV+) systems, long EOL now, and that 4x750G, wow from like 2007!
It depends which model 2100 you get, there is no easy way to know when ordering, though the v1 should be long out of stock now.
2100v1 is the Intel Tolapai 1.2ghz (similar to NVX), http://ark.intel.com/products/34314/Int ... r-1066-MHz
2100v2 is the Intel Atom D510 1.66Ghz (same as Pro4), http://ark.intel.com/products/43098/Int ... e-1_66-GHz
With the Intel x86 CPU, there is a wider range of software available, compared to the older limited Sparc CPU.
