If you are using XRAID, then when you insert a new drive it is normally added to the existing volume. If you don't want that to happen, then you need to switch to FlexRaid.
Netgear no longer offers any surveillance app, so you are on your own there. Hopefully other users will chime in. I believe Sandshark uses Blue Iris - running it on a PC, but using the NAS for storage.
