That's precisely what a NAS is for. If too many users access simultaneously, there will ultimately be a slow-down, but no damage is going to occur.

There's no issue with multi-users, as SandShark says that's what NAS are for - consolidation of storage for multiple users and devices. Though there will be some slowdown, streaming video doesn't require much resources (streaming full BluRay requires only about 7 MB/sec). If you are using plex, you won't be able to transcode two BluRays simultaneously on your NAS. But straight streaming is not a problem.
As far as the disks go, there will be more seeking but that shouldn't shorten their lives.
You are giving up RAID protection with your current setup, but you do get more capacity in return.
