Can I assing a stacit IP to each nic and access each ip?

OK, I'm not sure which VPN software you are using, but if it's SoftEther (which is what the VPN Server App by Poussin is) as a bridge, then you do not want an IP address assigned to that port at all. Disable both IPV4 and IPV6 protocols. See here, also: Softether VPN + ReadyNAS — a better solution for full access to network AND the NAS itself.

The goal is to NAT one IP for the VPN software and leave the other internal only.

As noted above, normally that isn't how VPN software is set up (though some VPN hardware devices might need it).
What VPN software are you talking about? Is it installed in the NAS or somewhere else on the network?
