As a follow up, I seem to see that XRAID with 4 drives was using RAID5. Would it be possible to reset the NAS and configure it for RAID5, then put the old drives in?

Unfortunately you made a $150 mistake. You can't migrate your array to the v2.
If you can get at least three of the drives connected to a PC (either SATA or with USB adapter/docks) you could offload the files with r-studio. https://www.r-studio.com/

It was a 4 disk setup w/ XRAID, wasn't that just a non-proprietary RAID version?

The NV+ v1 actually uses RAID-4 underneath (same idea as RAID-5, but with a dedicated parity disk, instead of spreading the parity blocks across all the disks). It has some hardware acceleration for the parity blocks, and they are written to an unpartitioned part of the parity disk (usually the last one).
The v2 should be using normal RAID-5 with purely software RAID. But keep in mind that with both NAS the OS partition is on the hard drives, and the systems boot from the hard drives.
The OS is quite different on the v2. Your idea of doing a reset and then migrating the disks won't work. The system either won't boot with those disks (detecting a "corrupt root"), or if you are unlucky (or try to hot-swap them) it will reformat the disks and create a new empty volume.
