Deleting the share does delete the data.
I agree that professional data recovery is the best option, and trying to recover data yourself can easily make things worse.
And also, keeping the file system "as it is" will make recovery much easier. Shutting the NAS down is a good way to do that. Writing to the NAS will likely overwrite some of your photos, since they are now in free space.
