You definitely would have got a popup which asked for you to type something to confirm you wanted to delete the share. This is a safeguard against accidental deletion of shares.

Your logs show that after you deleted the snapshots you deleted the share as well.

There was an option to delete all the snapshots, i think this is what deleted the share.

there used to be 2 folders, but it still shows the NAS contains the Data, i can't seem to get to it.

Well you deleted the shares. There would have been a warning before you deleted it about the consequences and you would have been asked to confirm you wished to proceed.
No deleting the snapshots would not have resulted in deleting the share. They are two separate actions.
You last did a factory reset back on 6.1.2. You should do a factory default (wipes all data, settings, everything) and restore your data from backup.
