You can migrate the disks to any OS-6 model. The NAS will reinstall the OS, but preserve the settings and data.
One caveat - many apps are OS-specific, and they aren't reinstalled. So plex (and most other third-party apps) will need to be reinstalled after you migrate.

Are these the correct instructions? The process seems simple enough. I just need to make sure the disks are inserted in the correct bay order.
Do I need to update any firmware or update the OS before I insert the disks?

It's a good idea to test the new NAS before you migrate. You can use a scratch disk for this (not part of the array). You'd do a factory install onto the scratch disk, and then make sure the NAS boots with the disk in each bay.
As part of the testing process, you can also install firmware on the new NAS that matches the old (or just install current firmware). If you migrate to an x86 NAS (RN300 series or better), then it would be a good idea to install the firmware before migration. The NAS will have to reinstall firmware from it's flash memory in that case - and that could result in a firmware downgrade. It's best to avoid that.
