Connectivity issues from different subnet
Recently we've been having issues with connectivity to our NAS when connecting from another subnet. We have two networks, 192.168.5.x and 192.168.10.x, and the NAS is on .5.x. Users on .5.x have ze...
I understand that you suspect that the antivirus feature of the gateway you use may be the root cause in how it checks cifs/smb packets.
Gateway is correct, as users on the .10.x network do see the nas. It is just when opening or modifying files do these issues occur.
I ran a ping test from that network overnight and the highest ping time I saw was 102ms with the majority being <1ms-3ms and an occasional one in the teens and 20 ms range.

Understood. But the router (or switches) on the path could be creating some packet loss that is only seen by the .10.x network users.
Are you using bonding in the NAS?

Perhaps also run that test during working hours.

Close to 1% of the RX packets for the 10.x subnet are being dropped:

That's quite a high amount.
The systemd-journal.log is flooded with messages about samba.
I see you have SSH enabled. Did you turn on debug logging for samba?
