Note that Plex Media Server is *not* DLNA compliant - it is a proprietary server that requires specific clients. The mac client however can access DLNA servers.
If you are not willing to jailbreak your ATVs then for the moment you have no means to access NAS media except by using iTunes to stream media.
There is a Plex client for Roku boxes which does not require any mods as far as I'm aware.
