FYI: There is also now a Samsung TV Plex client in addition to the LG support Plex offer directly. I actually have an LG TV with Plex support, but it's not quite there yet in terms of quality so I personally wouldn't recommend that yet.
That said, I've read good things about the ATV2 Plex client, and also about the Roku client which is a $99 option. Given you have multiple ATV2's, and you can always restore a default config (ie back out the jail break - or at least I know you can with the iPhone as I've done that and wouldn't expect ATV to be any different) why not give it a go? There's a detailed tutorial on the Plex wiki which doesn't seem difficult to follow
