Switching to FlexRAID from XRAID will not delete data as long as there is no DESTROY VOLUME clicked and DESTROY word typed. However, it is important and we always strongly recommend to always have full backup of the data, after all, it is not wise to store important data to just one device.
I believe your first option is okay.
As for the second option, no it would not lose any data. You are performing volume expansion which is allowed on XRAID. It should be done one disk at a time.
