The short answer is "not much".

If Apple allowed non-Apple servers to provide "home sharing" then there would be more benefits - music could be directly played on iPhone, iPad, Apple TV, and possibly be available through iCloud without needing a PC.
As it is, there is a small performance advantage to running the server on the NAS instead of over the network. That's about it. This is one area where Team Android is ahead.
