If a disk crashes, you should still be able to read/write to the volume. Frontview will tell you that the volume is degraded (not redundant).When you insert the replacement drive, the NAS will rebuild it.
Though disks can fail in rapid succession, so you don't want to delay in getting the replacement. Setting up email notifications is a good idea, then you get email alerts if a disk starts failing.
Note that even with RAID it is still possible to lose your data, so having a backup strategy is important. I also recommend a UPS (with a USB interface to the NAS, so the NAS gets power status from the UPS). That will shut down the NAS gracefully if there is unexpected power loss, as well as protecting it from surges.
