Got a bit of an update.
Been messing with the settings, and after speaking to support managed to get Offline Syncing to work, poorly, but kind of work.
Basically I disabled all the security settings, Enabled Oplock, and Enabled Auto Permissions. My laptop is now syncing some mapped drives, my desktop is syncing some of the mapped drives, flagging the same error 'The Process cannot Access the File because it is being used by another process.'
It seems to be with the NAS though, as the Desktop and Laptop won't sync the same mapped drive, but are syncing the GlobalShare, and some of the others fine. What confuses me is that there is no difference between the settings on the NAS of the Shares. They are all set the same.
