If you wish to ensure that sensitive data cannot be captured and read during transmission, you would need to use some sort of encryption, whether it be via SSH or some sort of VPN hardware.

This is the old belt & suspenders method of 'layered' security. The more layers you have in place, the harder it is to defeat. Someone might be able to spoof an IP, or guess a password, or steal an SSH key, but to get all 3 would take a miracle.
