(1) xraid will not do what you want. You can use flex-raid to create multiple volumes. However, you will need to do a destroy your current xraid volume (and all the data on it) to get there.
The setup here: viewtopic.php?f=20&t=72067 is close to what you want. With 2 volumes, you create a Photos share on volume 1, and a Backup-Photos share on volume 2. Then schedule an hourly backup from Photos to Backup-Photos. That is not quite the same as mirroring, but it is close.
(2) The simple answer is that you don't need them. Just stick with shares.
