When you replace the 500 GB drive with a 3 TB one, then your volume will increase by 500 GB - 3 TB total (2.7 TiB).
Everything will work, but 2 TB of space will be unused. When you later replace one of the 1 TB drives with a 3 TB drive, then the volume will increase to 5 TB (4.5 TiB). At that point all the space on the disks will be used by the RAID array.
FWIW I recommend NAS-purposed (Seagate VN or WDC Red) or enterprise drives. The WD30EFRX or WD40EFRX are both suitable for your RN104. Upgrading with 4 TB drives is slightly more cost effective, so if the budget stretches to that you might want to consider using them instead.

Ok, it's almost clear.
But how do I change the disk?
Do I simply change it when NAS is off and then turn it on?

But how do I change the disk?The best way is to change it with the NAS running (remove the old drive, hot-insert the new one). Though it should also detect the new drive if you insert it with the NAS powered off.

I was searching for similar information but just want to clarify as this is terrifying to me! :smileyhappy:
I have 2 - 2TB drives and 2 - 4TB drives in my RN104. I too want to upgrade my drives, in my case the 2 - 2TB drives to 2 - 4TB drives so I will have 4-4TB drives. I am running firmware 6.4.2 which I know is one rev old. In fact I was just going to research how stable the 6.5.1 firmware is that it is asking me to upgrade to, but on to my question.
From my research, I believe the answer for me is the same as you gave the OP but just want to verify. First, make sure all is backed up. I am currently deciding if a typical USB external drive (attached to the PC) backup update (my normal method) is the way to go or perhaps try the method where you attach a drive directly to the NAS directly and it backs up (have not done that before). However the issue there is one external drive won't be big enough and also....having trouble wrapping my brain around the logic of backing up up to a drive that way whereby only another Netgear NAS can read the data and if my NAS is not working after a drive upgrade....not sure that makes sense? Do I understand that correctly regarding the backup that it makes? The FAQ says it formats to EXT4 which I don't think I can then read on a PC? So it's only use is to restore to a Readynas?
Anyway my real question is same as the OP. Given my drives are different sizes, is my method to hot swap one of the 2TB drives for a 4TB, wait a day or so until the log says it has rebuilt....then take a deap breath and do the same with the other 2TB drive?
Just wanted to check.....Like I said, terrifying.
