It seems that the following file
/etc/default/services
contained the line:
USER_HOME_DIRECTORY_SMB_ENCRYPT=(null)
which may have been preventing the SMB service from loading.
I edited this and changed it to:
USER_HOME_DIRECTORY_SMB_ENCRYPT=default
and after restarting, SMB seems to be working again.
I'm not sure what could have caused this, but will report back if it reoccurs.

Odd, as my own NAS has
USER_HOME_DIRECTORY_SMB_ENCRYPT=and it starts normally.
SMB encryption is configured for each share, and is set to "Enabled" in all my shares.

The only think I can think of is that having "(null)" there was causing the problem, since that was a warning in the error log, and I didn't know what else to mess with. I don't know what put that value there, but I posted my finding in case anyone else experiences the same scenario. It seems that removing "(null)" completely would have worked too. I used "default" because that was what I read was one of the valid values for this parameter.
Thanks!
