WAX218 Mesh
Can you mesh 2 WAX218 together using different channels?

As a mesh like Orbi? no.
Can you set it with the same ssid? Sure. The wax218 supports fast roaming so devices should roam like in an enterprise environment if the device supports fast roaming.

The WAX214/WAX218 are intended as a pure simple standalone wireless access point.
You could install more than a single WAX214/218 to one wired network and operate on different channels. However, you will have all the disadvantages very basic consumer wireless access points (or consumer routers configured to AP) have (sticky clients, no fast roaming, ...). Don't ask me why ... so please don't <3 !
If you need more than a single standalone wireless access point, head for the WAX610 (similar hardware specs like the WAX214) and the coming-up WAX6xx (similar hardware specs like the WAX218). These can be easily connected to a wired network, in standalone management allow e.g. a WAX610Y (or a WAX610, WAX6xx, WAC5xx) connected in a wireless bridge mode. Preferred mode is Insight management anyway, this gives you the full 802.11k/r/v "Mesh" capabilities, allow Instant Mesh configs, ... and much more.
