Wireless setup for small business - outbound access only, no on-prem resources
We are a small non-profit and have decommissioned all on-prem servers, databases, and applications and moved them to Microsoft Azure cloud and MS365 E5 (Entra, Defender, Intune, Office apps, etc.) about 4 years ago. I would like to decommission our NSa2650 firewalls and SonicWave wireless access points and just install a simple Wi-Fi mesh network for (outbound) internet access to the few employees who come into the office on occasion. We have Verizon Fios Gigabit service.
What would you recommend?

I was a huge fan of the Orbi pro's for this kind of thing for simplicity and easy of use. But they've been EOL'd. If you're not needing massive amounts of users/coverage/speeds, a used orbi pro system can be picked up cheap but you'll not have much for support. Otherwise, business class wise, you'd be looking at the insight series
